Lunch Box Ideas Honey Muesli Biscuit Recipe

These Honey Muesli Biscuits are so simple to make and are perfect as a small treat for the kid’s lunch boxes, afterschool snack, picnics, anything really.  They are not too crunchy with a softer centre and are SUPER delicious.  It is really hard to stop at just one!  Nothing beats eating a yummy home cooked biscuit with a cold glass of milk!

This recipe makes approximately 48 medium to small biscuits.

You will need:

Honey Muesli Biscuit Recipe

3 cups of your favourite muesli

1 ¼ cups self-raising flour

1 cup light brown sugar

1 cup melted butter

3 tbsp. honey

1 egg beaten

Method:

Simple muesli and honey biscuit recipe
  1. Pre-heat oven 180 degrees Celsius.
  2. Grease baking tray or line with baking paper.
  3. Mix muesli, flour and sugar in a large mixing bowl with a wooden spoon.
  4. Make a well in the centre and add the honey, egg and butter and mix well.
  5. Drop small tablespoons of the muesli mixture onto the baking tray.
  6. Bake on the middle shelf of the oven for about 15-20 minutes or until lightly brown
  7. Allow the biscuits to cool on the tray for a few minutes, then remove and place on a wire rack to cool completely.

When cooking with kids there is so much that they can do to be involved.  This can also depend on the age of the child.  For example, I would allow my 8 year old to peel carrots with little help but not my 4 year old without assistance.  Miss 4 likes to crack open the eggs but at times will still get some shell in the mixture but she is improving every time she does it.  This is okay because we can spoon out the shell and Miss 4 is developing confidence.  I think it is important to always supervise when cooking with kids (particularly hot food) and encourage and praise involvement as much as possible.

Here are a few ideas for involving the kids:

  • Measure, pour and mix the ingredients together.
  • Crack open the egg
  • Play spot the numbers – in the recipe, on the measuring cups and jugs, etc.
  • Model reading out loud the ingredients and instructions to your child.
  • Observe and talk about the process and changes that are taking place as you mix and cook.
  • Help tidy up: such as putting items away and wiping the benches. Kids love to wash the dishes!

So much learning happens when we cook with our kids: the social interactions, processing information, following directions, problem solving and coordination.

  • Sensory- hands on feeling and manipulating the ingredients through the senses.
  • Fine motor skills and hand-eye coordination- watching, doing and coordinating these actions.
  • Language development – cooking is a social activity requiring speaking and listening, also developing vocabulary.
  • Self-esteem- a sense of pride and achievement
  • Mathematics- number recognition and sequencing. Measuring quantities and estimating.

  2. Could you give me the weight of the museli you use please? I’m trying to make these delicious biscuits in the UK but we don’t do ‘cup’ measures here and it’s the one ingredient I can’t find a weight for online! Thank you.
